Recipe: Rose Pistachio Parfait with Cardamom Cream

Ingredients

Rose Syrup Base:

  • 1/4 cup rose water
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Pistachio Crunch Layer:

  • 1/2 cup shelled pistachios, chopped
  • 2 tbsp honey
  • 1/4 tsp sea salt

Cardamom Cream:

  • 1 cup heavy cream
  • 3 tbsp powdered sugar
  • 1/2 tsp ground cardamom
  • 1/2 tsp vanilla extract

Whipped Yogurt Layer:

  • 1/2 cup Greek yogurt
  • 1 tbsp powdered sugar
  • 1 tsp rose water

Garnish:

  • Edible rose petals
  • Additional chopped pistachios

Instructions

  1. Prepare the Rose Syrup Base:

    • In a small saucepan, combine rose water, sugar, and lemon juice.
    • Heat over medium heat until sugar dissolves completely, then let it simmer for 2 minutes.
    • Remove from heat and cool.
  2. Make the Pistachio Crunch:

    • Preheat the oven to 350°F (175°C).
    • Spread chopped pistachios on a baking sheet lined with parchment paper.
    • Drizzle honey evenly over the pistachios and sprinkle with sea salt.
    • Bake for 8-10 minutes, or until golden and aromatic. Let cool completely.
  3. Whip the Cardamom Cream:

    • Using an electric mixer, whip heavy cream, powdered sugar, cardamom, and vanilla extract until soft peaks form.
    • Transfer to the refrigerator to chill.
  4. Mix the Whipped Yogurt Layer:

    • In a small bowl, whisk Greek yogurt with powdered sugar and rose water until smooth and airy.
  5. Assemble the Parfaits:

    • In a tall glass or dessert cup, start with a spoonful of rose syrup at the bottom.
    • Add a layer of pistachio crunch for texture.
    • Follow with a generous dollop of whipped yogurt, then cardamom cream.
    • Repeat the layers as desired, finishing with a swirl of cardamom cream on top.
  6. Garnish and Serve:

    • Sprinkle with additional chopped pistachios and edible rose petals for a stunning presentation.
    • Serve immediately or chill for up to 2 hours before serving.
